I made this for my son Elliott's 16th bday - a definite make again cake - although only if you really like sweet - for me, I prefer a slightly less sweet treat - like the chocolate cake above with dark chocolate ganache - for my father n law, 88th bday October 2015

This is a super super easy cake to make - and you can use a buttercream or ganache icing - I've used ganache.....so many recipes out there for ganache - so I used 12oz Lindt 70% cacao & 1 cup cream - I overheated the cream & even though I let it sit, it still was too hot - and my ganache separated :O eek!! But I put it in the stand mixer, and with the paddle attachment slowly beat it while adding more heavy cream - and it went back to a nice glossy texture - I let it cool all the way & then whipped it, and used it for filling and piping pretty decorations on the cake!
